Continuing on-wards with our capsaicin in microemulsion, after scaling up to 20 g it was time to verify particle size and measure the Zeta potential. The zeta potential calculates the stability of the emulsion and other similar colloidal systems. Pictured below is the zeta machine, vaguely resembling a UV-spectrophotometer with a similar detection system using a laser instead of ultra-violet light and can be a wonderful conversation piece in the living room for a mere $60,000. For better mixing of our emulsions we used both the sonicator and the vortex machine. Unfortunately, when we measured the size of our samples, the particle sizes were too broad and wide so it is back to the drawing board tomorrow for a more suitable formulation design.
